Abstract: A 2-volume reference set for food microbiologists provides 10 authoritative technical reviews by experts in their respective fields on various advanced aspects of food microbiology. The 1st volume deals with the physiology of foodborne microbes at the molecular level, addressing the regulation of important intracellular processes, ranging from osmoregulation of bacterial cells to germination of spores. Also included are technical summaries and critical assessments of nutrient transport in bacteria, metabolic electrontransport in anaerobic bacteria, and genetic regulation of toxin production by foodborne microbes. The 2nd volume examines the intricacies and potential of new methods in microbiological assays and their scientific bases. Abstract: The issue of the genetic manipulation of plants, animals and microbes is addressed within the context of food production. Genetic manipulation is defined within the wider area of biotechnology and some of the main benefits of its use are summarized; safety and risk are examined and some of the socioeconomic problems it can create are discussed. It is concluded that the technique can offer great potential benefits in terms of increased quantity and improved quality of food, but it raises social/ethical concerns which can be summed up by asking: Is it safe? Is it fair? Is it natural?

Abstract: Challenges and near-term opportunities for growth research are examined in light of the needs and concerns for those who will ultimately accept, utilize and pay for new technology for growth promotion. The challenge from the livestock producer is for new ways to improve feed utilization. That from the consumer is to reduce fat and cholesterol content of meat without substantially changing taste, texture or price. Challenges arising from various segments of society include the need to ensure product safety and animal welfare, particularly with respect to recombinant DNA technology. The animal science community is challenged to contribute to development of regulatory policy regarding application of new technology to animal growth. Additionally, government decisions can challenge the long-term research planning process. The use of beta-adrenergic agonists, peptide hormones and growth factors and development of ways to manage gonadally intact males are suggested as near-term opportunities for growth research.

Abstract: An overview discusses the effects of biotechnology upon the food industry, the competitive advantages offered by the use of biotechnology in food production, and the need for management committment in the food processing industry to the expansion of biotechnology. Two major areas for biotechnology involvement in the food industry are cited: 1) agronomic advances (increased yields, new hybrids having greater vigor, improved plant varieties); and 2) non-agronomic advances (specific breeding of improved plants to provide certain benefits to the processor or the consumer). Considerations relating to the employment of internal or external expertise by a food processor are discussed also. (wz)

Abstract: A feature article sumarizes and discusses the background, goals, potential, and philosophical concerns of genetic engineering in the development of new, improved foods. By 1990, it is estimated that sales of genetically engineered agricultural products may reach 2-4 billion dollars. Some observers, however, fear that acceleration of genetic alterations in crops and animals ultimately may worsen human and environmental health. In addition, geneticlly altered herbicide-resistant seeds may drive traditional varieties from the market. The controversy has become so heated that a Presidential commission has been established to assess the social and ethical issues of genetic engineering. Arguments on both sides of the genetic engineering question are discussed. (wz)
